...rub both sides of the steak with just a little ground coffee and even less sugar. (I would go with a ratio of 3:1)
The sugar will caramelize, adding to the sear on the outside of the meat. The coffee will add a little bit of a smoky flavor so that you will feel as though you used an outdoor grill, even though you just cooked it on your kitchen stove.
