Maxwell Transformed



Loaf number 2 of my sourdough experiment. I made an easy no-knead loaf to see if this worked better than the recipe that I originally used.

The rise was higher than my trial loaf but still has a way to go to be where I would like it to be. Air pockets formed (yay!) but weren't consistent throughout the loaf. The traditional sourdough tang is getting there but my starter needs to be a bit older I guess.

Criticism aside, this was actually an OK loaf of bread. I predict that my next loaf will be even better and that my April 1st one (as promised) will be perfect.
