Poached Eggs are excellent additions to brunch or to the top of potentially boring salads or grain or vegetable bowls that need a little ooomph. That being said, they are a bit of a pain to make and very often don't exactly come out as planned.
Rather than heating water and vinegar in a pan, making a vortex, dropping the eggs in and praying, your microwave is your best friend for these.
Drop an egg into a glass of water. It will sink to the bottom. Make sure it is totally submerged with the water.
Microwave on high for 60 seconds. Open the door to the microwave and, lo and behold, the egg will have risen to the top of the glass. Let sit for a minute before draining off the water and patting the egg dry and you will have a perfectly poached egg with a runny center.
