I've made a variation of this before but, because mackerel is such a strong presence in a dish, I amped up the flavor in this version of my avocado sauce so that it could better stand up to the fish. Both versions of the spiralized zucchini and creamy avocado are delicious and are 5-minute or less impactful additions to any meal.
This makes an accompaniment to fish for 4 people if served with an appetizer and a dessert. If you are only serving this and fish, it will serve 2. I served it with mackerel but I think it would be an excellent summer dish with poached salmon.
1 lb spiralized zucchini noodles
1 ripe avocado
1/2 - 1 clove garlic, peeled and crushed
2-4 anchovy fillets or a dollop of anchovy paste
Juice and zest from 1 lemon
2 tsps olive oil
Salt to taste
Blend all of the ingredients except the zucchini together to form a smooth paste.
Add the zucchini noodles and blend well. Check seasoning and add more salt or lemon juice if needed.
Set aside for 10-15 minutes before serving. Stir well before serving.
