My former sister in law loves a good party but is not so fond of cooking. She is a pro at keeping the cocktails coming at an exceedingly fast pace, so much so that your glass is always full and you never know quite how much you have imbibed - until it is too late. She often serves drinks with this easy cocktail snack which, much as I hate to admit it because of its simplicity, is really surprisingly tasty. A good recipe to have in one's repertoire for last minute snacks.
Evelyne always used Gruyère for her version but I have found that any flavorful hard cheese works quite well, with my personal preference being Comté.
1 lb hard cheese, cubed
white pepper
Salt flakes
Put the cheese cubes in one layer on a parchment lined tray.
Sprinkle generously with the salt and pepper; roll the cheese cubes around in the salt and pepper until coated on all sides and salt and pepper visible on cheese. Be even more generous than you were originally and do this again.
Discard excess as you decant into a pretty bowl for serving. Add toothpicks. That is pretty much it.
I have taken liberties with the recipe in the past and rolled the cheese cubes in caraway seeds as well as salt and pepper but the base recipe works.
