These are not your grandpa's mushy peas which, quite frankly, were not the most vibrant of greens since they were usually overcooked. I like my version, which uses both the microwave and frozen peas for an easy dinner side dish or, if you use an immersion blender (which I had not yet done in the image above), a delectable dipping sauce for fish.
This makes about 1 cup of sauce.
1 10 oz package frozen sweet peas
2 Tbsps butter
1 Tbsp sour cream
1 Tbsp fresh lemon juice
Salt to taste
Place the frozen peas, butter and sour cream in a microwave safe bowl. Blitz on high for 3 minutes.
Remove from the microwave and mash with a potato masher if using as a side dish or simply stir to combine if end result will be a sauce.
Return to the microwave and blitz fr 2 more minutes.
Taste a pea for sweetness and salt accordingly. Then stir in the lemon juice. This may seem like a lot of acidity but the zing from the lemon will curb the sweetness of the peas which can sometimes be too much.
If using as a side, mash until you get the consistency you want. Ditto with an immersion blender if you are making a dipping sauce for fish, as I did.
