L. came home from school today desperately craving a sweet treat. Because I am a besotted mother - and happened to have everything I needed to hand - his wish came true in 45 minutes.
Reminder folks - this is the best cake ever. And if you don't have buttermilk, measure out a tablespoon of vinegar (I used balsamic) and then fill your measuring cup the rest of the way with milk to make a cup.

I usually make it in 2 layer tins but today I made it into one large cake in an 8" springform pan and it worked very well too. With the addition of 6 minutes cooking time.
