And here it is folks, the slightly extra terrestrial, alien egg, horror movie insect chrysalis, looking result of my cured egg yolk experiment, in the drying stages. I fear that I did not remove enough of the spiced salt before setting the yolks out to dry and that they we be rock hard. We shall soon see: right now the plan is to grate these over buttered fettuccine on Sunday night and see if I have obtained a proper, unami-rich, Bottarga type flavor.
