Devilled Ham

People don't seem to eat devilled ham any more and those who have eaten it in their youth have usually only had the devilled ham that comes in a can. This is a pity as devilled ham is really easy to make and surprisingly yummy in a throw back to the '70s kind of way. I made it because I had the tail end of a Kentucky Legend honey ham in the fridge but you could use a ham steak to make this as well. I served it with crackers, but it is equally delicious on really dense, dark bread, like pumpernickel.


1 1/2 cups of your favorite ham, chopped (about 8 oz)

2 Tbsps mayonnaise

1 Tbsp grain mustard

1 Tbsp hot dog relish or very finely chopped sweet pickles or cornichons

2 tsps finely chopped sweet white onion

1/4 cup water

1 tsp Worcestershire sauce


Place the water, Worcestershire sauce and ham in a blender and blend to form a rough paste.


Measure the other ingredients in a bowl. Scrape the ham paste into the bowl and stir well to combine.


Place in the fridge for a couple of hours to set.


Remove from the fridge and bring to room temperature before serving. Taste and adjust mustard and/or relish if needed.
