Lunch in the Time of Corona...



We are staying in. Staying healthy. Eating right(ish) - the usual amount of vegetables, maybe a tad more butter than usual... As much as I enjoy planning and making dinner, lunch is a bit more of a challenge for me but I have been working hard to avoid an endless rotation of sandwiches. Here are this week's wins.

Spicy Split Pea and Kielbasa Soup from the freezer


Grilled Cheddar and Lani's Farm Garlic Chive Kimchi Sandwich on Whole Grain Bread

with a Butterhead Lettuce Salad Dressed with Fig Balsamic Dressing



Ferran Adria inspired Potato Chip Frittata, Mesclun Salad with Pique Based Dressing


Avocado and Horseradish Sour Cream Toasts with Daniel Boulud Smoked Salmon, Mesclun Salad with Everyday Vinaigrette
