I only made 2 yolks since this was a bit of an experiment and I was going in blind. These turned out beautifully and were absolutely delicious for very little effort.
I shaved them over buttered angel hair pasta and served them to L. with great trepidation but he loved them too. They added a creamy, tanginess to the pasta, with back notes of the woodsy herbs that I mixed in with the salt. that was very pleasing.
I will make these again, in a larger quantity. I need to fiddle a tiny bit with the recipe and will therefore post it the next time I make these.
