Bonus Recipe: Sweet Potato Rounds with Hummus and Coriander Sriracha



I used store bought plain hummus for this and these turned out amazingly well. L. felt that they needed a crunchy element so next time I might add either crushed walnuts or Pomegranate arils, and I microwaved the sweet potatoes rather than roast them, which left the rounds a bit damper than I would have liked for easy eating so have edited the recipe to reflect that. This was one of those snacks that get whipped up at the last minute, which end up tasting better than those over which you have slaved...


2 sweet potatoes (look for the longer thinner ones that will make appetizer sized rounds)

1 container hummus (I used Tribe plain but you could used a flavored version as well)

Green hot sauce (or your favorite brand of hot sauce)

Micro greens for garnish (optional)

Crushed nuts or Pomegranate arils for garnish (optional)


Preheat oven to 400.


Scrub your potatoes clean, prick each one in several places with a fork, and place them on a baking tray.


Place in oven and bake for 30-40 minutes, until a fork inserted into the thickest part meets no resistance.


Remove the pan from the oven and set aside until cool.


Cut into rounds and top each round with a generous dollop of hummus, a glog of hot sauce and whatever garnish you are using.


Seems like a nothing recipe but is actually quite delicious AND vegetarian.
