Last night L., my mother and I were talking about the best things I have ever cooked.
I feel that this week's corn soup was right up there, and of course spring rolls - which we happened to be eating and which inspired the conversation - are always a hit. My mother brought up my chicken enchiladas which are, if I say so myself, stellar. Then L. mentioned "that pancakey-sconey snack that you used to make me after school". I immediately knew what he meant.
Research shows that one of the last time I made these for him was in 2015. They must be good if he remembers them so vividly after three years.
