I was recently reminded of ham cooked in coca cola and, with half a bottle of root beer in the fridge and a hankering for pork chops, this recipe seemed like a natural progression.
L.. who practically makes the sign of the cross to ward off evil when there is any possibility of sweet with meat (no canard a l'orange for him), refused to taste it, but I thought it made a nice addition to a bone in char-grilled chop.
Made about half a cup and all you really need is a tablespoon or so per person.
10 pitted dates
1/3 cup of root beer
1 tsp Bourbon
1 tsp grated fresh ginger
1/4 tsp chopped fresh thyme leaves
Salt
Heat the root beer until boiling. Pour over the dates and leave for 15 minutes to rehydrate the fruit.
Tip the date and root beer mixture, the Bourbon, and the ginger into a blender and blend until as smooth as possible.
Stir in the thyme and salt to taste.
Serve hot.
