I will admit to coming up wit this combination simply because I am trying to incorporate flaxseed into my diet and got bored with sprinkling it over yogurt or oatmeal. The experiment worked and the end result is a tart, nutty mustard that went well with pork and cabbage.
1 Tbsp grain mustard
1 Tbsp ground flaxseed
2 tsps sauerkraut brine, work your way up by 1/2 tsp increment if needed to get the right texture for your end result
Mix all ingredients together to make a paste. Add additional saurkraut brine if needed in order to get a texture that ressembles that of unadulterated mustard.
Let rest for 30 minutes before using.
