This is one of the world's most simplistic dipping sauces, which I make every spring to serve with steamed asparagus - both hot and cold. I have to make exact quantities because, despite its minimal ingredient list there is something about this mayonnaise that makes me want to dip anything that is not nailed down in it and then inhale it.
I have made this with a painstakingly prepared homemade mayonnaise and it was delicious but, quite frankly, good old Hellman's works just as well in this recipe. As well as asparagus, it is delicious as a dressing for cabbage slaw, with crudites in general and as part of an interesting deviled egg filling in the place of the usual plain mayo.
Makes about 1/2 cup of sauce.
5 Tbsps mayonnaise
3 Tbsps red miso
1 tsp Frank's hot sauce
Juice from 1/2 lemon
Whisk all the ingredients together to form a smooth paste.
Transfer to a serving dish. Sprinkle the surface with sesame seeds, chive or furikake for a bit of color. Dip away.
