Pan Fried Soft Shell Crabs with Avocado Tartare



Crab is one of my favorite things; budget and seasonality permitting, I would eat it every week if I could. But that is not the case so, since crab is now available and budget be damned, please make this dish which was the appetizer course at my crab lovers crab dinner yesterday evening. It is a very easy dish that looks complicated and a wonderful mix of textures and temperatures.



Prepare 4 soft shell crabs as per the instructions here (do not make the salad portion of the dish).


Place the crispy, piping hot crabs on a quarter portion of this.
