This recipe doesn't look like much. It doesn't call for many ingredients. It cooks in three minutes in the microwave. Just a basic, easy, summer recipe you might think. I dare you to stop eating it once you taste it. I found it to be the corn equivalent of potato chips and could not stop eating it. I even considered naming it Crack Corn (the drug not Jimmy's activity.)
6 ears of corn, shucked and kernels removed from the cob
2 jalapeno peppers (or more, or less, depending on your tolerance for spice)
1 Tbsp butter, cut into small cubes
2 tsps white miso
Place all ingredients in a microwave safe bowl.
Microwave on high for 3 minutes.
Remove from microwave and stir to coat all the kernels of corn with a sheen of buttery, miso sauce.
Can be served hot or room temperature. Does not require, IMHO, any additional salt.
